Ingredients:
1 lb ground beef or lamb
1 onion, chopped
3 cloves garlic, minced
1 cup frozen mixed vegetables (peas, carrots, green beans, corn)
2 tbsp tomato paste
1 tsp Worcestershire sauce
1 tsp dried thyme
Salt and pepper
3 cups mashed potatoes
1/4 cup shredded cheddar cheese
Instructions:
Preheat oven to 375°F (190°C).
In a large skillet, cook ground beef or lamb over medium-high heat until browned, breaking up any large chunks with a spoon.
Add onion and garlic to the skillet and cook until softened, about 5 minutes.
Add frozen mixed vegetables, tomato paste, Worcestershire sauce, thyme, salt, and pepper to the skillet. Cook for another 5-10 minutes, until the vegetables are tender and the mixture is heated through.
Spoon the beef mixture into a 9-inch (23cm) pie dish.
Spread the mashed potatoes on top of the beef mixture, making sure to cover it completely.
Sprinkle shredded cheddar cheese on top of the mashed potatoes.
Bake in the preheated oven for 20-25 minutes, until the cheese is melted and bubbly.
Let the shepherd’s pie cool for a few minutes before serving.
Optional: You can also broil the shepherd’s pie for a few minutes after baking to get a nice golden crust on top.
